Mac and Cheese with Broccoli

A creamy, cheesy macaroni and cheese dish with tender broccoli florets, perfect for a comforting and wholesome meal.

  • 2 cups elbow macaroni (uncooked)
  • 2 cups broccoli florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add macaroni and cook according to package directions. Add broccoli florets to the pot during the last 3 minutes of cooking. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to make a roux.
  3. Slowly whisk in the milk, stirring constantly until the sauce thickens, about 5 minutes.
  4. Remove from heat and stir in the shredded cheddar cheese, salt, pepper, and paprika until smooth.
  5. Add the cooked macaroni and broccoli to the cheese sauce, stirring to coat evenly.
  6. Serve immediately, garnished with extra cheese or paprika if desired.

Notes

  • For extra creaminess, use half-and-half instead of milk.
  • You can substitute other cheeses like mozzarella or Monterey Jack.
  • Try adding cooked chicken or bacon for a protein boost.
