Mac and Cheese with Broccoli

- 2 cups elbow macaroni (uncooked)
- 2 cups broccoli florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Bring a large pot of salted water to a boil. Add macaroni and cook according to package directions. Add broccoli florets to the pot during the last 3 minutes of cooking. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to make a roux.
- Slowly whisk in the milk, stirring constantly until the sauce thickens, about 5 minutes.
- Remove from heat and stir in the shredded cheddar cheese, salt, pepper, and paprika until smooth.
- Add the cooked macaroni and broccoli to the cheese sauce, stirring to coat evenly.
- Serve immediately, garnished with extra cheese or paprika if desired.
Notes
- For extra creaminess, use half-and-half instead of milk.
- You can substitute other cheeses like mozzarella or Monterey Jack.
