- 2 tbsp olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/4 tsp crushed red pepper flakes (optional)
- 1 can (14 oz) crushed tomatoes
- Salt and pepper, to taste
- 4–6 large eggs
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley or cilantro
- Optional: olives or artichoke hearts for topping
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and red bell pepper. Sauté until softened, about 5-7 minutes.
- Add minced garlic, cumin, paprika, and red pepper flakes. Cook for 1 minute until fragrant.
- Pour in the crushed tomatoes. Season with salt and pepper. Simmer for 10-15 minutes until thickened.
- Make small wells in the sauce and crack eggs into each well.
- Cover the skillet and cook for 5-7 minutes, or until egg whites are set but yolks are still runny.
- Sprinkle with feta cheese and chopped parsley or cilantro.
- Serve hot with warm pita or crusty bread.
