Mini Avocado Boats

Mini avocado boats are a quick, healthy, and customizable snack or appetizer made by stuffing halved avocados with various flavorful fillings.

Ingredients

  • 2 ripe avocados
  • 1/4 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cooked bacon or chickpeas (optional)
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Slice the avocados in half and remove the pits.
  2. Carefully scoop out a little of the flesh to create a larger cavity for filling, and chop the scooped-out flesh.
  3. In a bowl, combine the chopped avocado, cherry tomatoes, red onion, bacon or chickpeas (if using), lime juice, and cilantro.
  4. Season with salt and pepper to taste, and mix gently.
  5. Spoon the mixture into the avocado halves to form boats.
  6. Serve immediately as a snack or appetizer.

Notes

  • Use chickpeas for a vegetarian or vegan option.
  • Best served fresh to prevent browning of the avocado.
  • Optional toppings include feta cheese, sriracha, or crushed nuts for added flavor and texture.
