  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1/2 cup chocolate chips
  • 1 tablespoon cornstarch (optional, for thicker texture)

Instructions

  1. In a medium saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally until the sugar is fully dissolved.
  2. If you prefer a thicker texture, dissolve the cornstarch in a small amount of cold milk, then add to the saucepan. Stir well.
  3. Once the mixture starts to simmer, remove it from the heat and stir in the peppermint extract and a few drops of green food coloring if desired.
  4. Let the mixture cool to room temperature, then refrigerate for at least 2 hours or overnight to chill.
  5. Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  6. When the ice cream reaches a soft-serve consistency, fold in the chocolate chips.
  7. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.

Notes

  • For a more intense mint flavor, you can increase the peppermint extract to 1 1/2 teaspoons.
  • If you don’t have an ice cream maker, you can place the chilled mixture in a shallow dish and freeze it, stirring every 30 minutes until it reaches the desired consistency.
  • Use mini chocolate chips for a smoother texture or regular-sized chips for more crunch.
