2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 teaspoon peppermint extract
Green food coloring (optional)
1/2 cup chocolate chips
1 tablespoon cornstarch (optional, for thicker texture)
Instructions
In a medium saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally until the sugar is fully dissolved.
If you prefer a thicker texture, dissolve the cornstarch in a small amount of cold milk, then add to the saucepan. Stir well.
Once the mixture starts to simmer, remove it from the heat and stir in the peppermint extract and a few drops of green food coloring if desired.
Let the mixture cool to room temperature, then refrigerate for at least 2 hours or overnight to chill.
Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.
When the ice cream reaches a soft-serve consistency, fold in the chocolate chips.
Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
Notes
For a more intense mint flavor, you can increase the peppermint extract to 1 1/2 teaspoons.
If you don’t have an ice cream maker, you can place the chilled mixture in a shallow dish and freeze it, stirring every 30 minutes until it reaches the desired consistency.
Use mini chocolate chips for a smoother texture or regular-sized chips for more crunch.
