Nutella Lava Cakes

Nutella Lava Cakes are rich, individual-sized chocolate cakes with a gooey, molten Nutella center, perfect for a quick and indulgent dessert.

  • 1/2 cup (115g) unsalted butter
  • 6 oz (170g) semi-sweet or dark chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1/8 tsp salt
  • 2 tbsp all-purpose flour
  • 4 tbsp Nutella (1 tbsp per cake)
  • Butter or non-stick spray for greasing ramekins
  • Optional: powdered sugar or ice cream for serving

Instructions

  1. Preheat oven to 425°F (220°C) and grease 4 ramekins with butter or non-stick spray.
  2. Melt the butter and chocolate together in a heatproof bowl over simmering water (double boiler method) or in the microwave in 30-second intervals. Stir until smooth.
  3. In another bowl, whisk the eggs, egg yolks, sugar, and salt until thick and pale.
  4. Slowly add the melted chocolate mixture to the egg mixture, stirring constantly.
  5. Gently fold in the flour until just combined.
  6. Divide the batter evenly among the ramekins, filling each halfway.
  7. Add 1 tablespoon of Nutella to the center of each ramekin, then top with remaining batter to cover.
  8. Place ramekins on a baking sheet and bake for 12-14 minutes, until the edges are set but the centers are soft.
  9. Remove from oven, let rest for 1 minute, then invert onto plates.
  10. Serve immediately with powdered sugar or ice cream if desired.

Notes

  • Make sure not to overbake or the center won’t be gooey.
  • You can prepare the batter ahead and refrigerate; bring to room temp before baking.
  • Use good quality chocolate for the best flavor.
