- 1/2 cup (115g) unsalted butter
- 6 oz (170g) semi-sweet or dark chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup (50g) granulated sugar
- 1/8 tsp salt
- 2 tbsp all-purpose flour
- 4 tbsp Nutella (1 tbsp per cake)
- Butter or non-stick spray for greasing ramekins
- Optional: powdered sugar or ice cream for serving
- Preheat oven to 425°F (220°C) and grease 4 ramekins with butter or non-stick spray.
- Melt the butter and chocolate together in a heatproof bowl over simmering water (double boiler method) or in the microwave in 30-second intervals. Stir until smooth.
- In another bowl, whisk the eggs, egg yolks, sugar, and salt until thick and pale.
- Slowly add the melted chocolate mixture to the egg mixture, stirring constantly.
- Gently fold in the flour until just combined.
- Divide the batter evenly among the ramekins, filling each halfway.
- Add 1 tablespoon of Nutella to the center of each ramekin, then top with remaining batter to cover.
- Place ramekins on a baking sheet and bake for 12-14 minutes, until the edges are set but the centers are soft.
- Remove from oven, let rest for 1 minute, then invert onto plates.
- Serve immediately with powdered sugar or ice cream if desired.
Notes
- Make sure not to overbake or the center won’t be gooey.
- You can prepare the batter ahead and refrigerate; bring to room temp before baking.
- Use good quality chocolate for the best flavor.
