Ombre Popsicles

Refreshing homemade ombre popsicles with layers of fruity flavors, perfect for summer treats.

Ingredients

  • 1 cup strawberries, hulled and chopped
  • 1 cup mango, peeled and chopped
  • 1 cup blueberries
  • 1 cup coconut milk
  • 3 tbsp honey or maple syrup (optional, adjust to taste)
  • 1 tsp lemon juice

Instructions

  1. Blend strawberries with 1/4 cup coconut milk and 1 tbsp honey until smooth. Pour into popsicle molds, filling 1/3 of each mold. Freeze for 30 minutes.
  2. Blend mango with 1/4 cup coconut milk and 1 tbsp honey until smooth. Pour over strawberry layer. Freeze for another 30 minutes.
  3. Blend blueberries with 1/4 cup coconut milk, 1 tbsp honey, and lemon juice until smooth. Pour over mango layer.
  4. Insert sticks and freeze popsicles for at least 4 hours or until fully set.
  5. To serve, run warm water over the outside of the mold for a few seconds to release the popsicles.

Notes

  • You can swap fruits with raspberries, peaches, or kiwi for different colors.
  • Adjust sweetness depending on the natural sugar of fruits.
  • For a creamier texture, replace coconut milk with Greek yogurt.
