One Pan Garlic Parmesan Chicken Pasta

An easy yet restaurant-worthy one-pan dinner featuring tender chicken in a rich, creamy garlic parmesan sauce tossed with penne pasta—all ready in about 30 minutes.

Ingredients

  • 1 tbsp avocado oil or olive oil
  • 1 lb boneless, skinless chicken breast, butterflied or beaten to ½” thickness
  • 1 tbsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper, to taste
  • 1 tbsp avocado oil or olive oil
  • 1 tbsp unsalted butter
  • ½ jumbo yellow onion, diced (about 1 cup)
  • 46 large cloves garlic, minced
  • 8 oz dry penne pasta (regular or gluten-free)
  • 2 cups chicken broth
  • 1 cup finely grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a small bowl, mix Italian seasoning, paprika, salt & pepper; pat onto both sides of chicken breasts.
  2. Heat 1 tbsp oil in a large pan over medium; cook chicken 3–5 min per side until 165 °F. Remove and set aside.
  3. Reduce heat to medium-low; add remaining oil and butter. Sauté onion with a pinch of salt for ~3 min until translucent, then add garlic and cook 1 min more.
  4. Deglaze pan with chicken broth, scraping browned bits; bring to a light boil. Stir in pasta, cover, and cook 10 min until al dente.
  5. Turn off heat; stir in Parmesan, heavy cream, and parsley until sauce is warm and slightly thickened.
  6. Slice chicken and return to pan; toss to combine. Serve immediately.

Notes

  • For best melting and flavor, freshly grate Parmesan using the smallest holes on your grater; pre-grated cheese can clump.
