- 2 tablespoons vegetable oil
- 6 medium potatoes, peeled and cubed
- 2 pounds smoked kielbasa sausage, sliced into ½-inch rounds
- 1 large onion, sliced
- 2 green bell peppers, chopped
- Heat the oil in a large skillet over medium heat. Add the potatoes, cover, and cook, stirring occasionally, until they are almost tender and lightly browned, about 10 minutes.
- Stir in the kielbasa, onions, and peppers. Cover and cook until the onions and peppers are softened and the sausage is heated through, about 5 minutes.
- Season to taste with salt and pepper, then serve hot.

- For extra flavor, stir in 1 teaspoon smoked paprika or Cajun seasoning along with the sausage.
