One Pot Beef Taco Pasta (30 minutes)

This One Pot Beef Taco Pasta dinner is BEYOND easy and a dish the entire family is guaranteed to enjoy! It’s a soul-satisfying, taco-flavored one pot meal that’s zesty and budget-friendly too!

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. taco seasoning (I use Outside Table)
  • 2½ cups low-sodium beef broth
  • ½ cup milk
  • 1 (8-oz.) can tomato sauce
  • 2 cups mini farfalle pasta (or any small pasta shape: elbows, mini penne)
  • ½ cup Cotija cheese, crumbled
  • Crushed tortilla chips and chopped cilantro leaves, for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and chopped onion; cook, breaking up the meat, until no longer pink and the onions are translucent. Drain most of the liquid.
  2. Stir in the minced garlic and taco seasoning; cook for 1 minute.
  3. Add the beef broth, milk, tomato sauce, and pasta; stir to combine. Bring to a boil.
  4. Cover, reduce heat to a simmer, and cook for 12–14 minutes, or until the pasta is tender and most of the liquid has evaporated, stirring occasionally.
  5. Season to taste with salt and pepper. Stir in the Cotija cheese until melted (or serve it on top) and garnish with crushed tortilla chips and cilantro leaves. Serve immediately.

Notes

  • I used mini farfalle pasta, but you can also use elbows or mini penne.
  • You can use your favorite taco seasoning; I find 2 Tbsp. of Outside Table seasoning gives the perfect spicy kick.
  • Mix the Cotija cheese into the pasta or serve it on top for guests to add themselves.
  • Crushed tortilla chips add a tasty crunch but are optional.
  • Cilantro leaves are optional; omit if you dislike cilantro.
