Peach Cobbler

- 6–8 fresh peaches, peeled and sliced (about 6 cups)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (1 stick), melted
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1 tablespoon lemon juice
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, toss the sliced peaches with 1/2 cup granulated sugar, brown sugar, lemon juice, and cinnamon. Let sit for 10 minutes to release juices.
- Pour the melted butter into a 9×13 inch baking dish.
- In another bowl, whisk together flour, remaining 1/2 cup granulated sugar, baking powder, and salt. Add milk and vanilla extract, and stir until smooth.
- Pour the batter over the melted butter in the baking dish. Do not stir.
- Spoon the peach mixture (including juices) evenly over the batter. Do not stir.
- Bake for 40-45 minutes or until the top is golden brown and the cobbler is bubbling.
- Remove from oven and let cool slightly before serving.
Notes
- Best served warm with vanilla ice cream or whipped cream.
- You can use canned or frozen peaches if fresh ones aren’t available.
- Adjust sugar based on the sweetness of the peaches.
