- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) packed brown sugar
- 1/2 cup (130g) creamy peanut butter
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (90g) chocolate chips or chunks (optional)
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter and brown sugar until smooth.
- Stir in peanut butter, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Stir in chocolate chips if using.
- Spread batter evenly into the prepared pan.
- Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool completely in the pan before slicing into squares.
Notes
- For extra peanut flavor, swirl additional peanut butter on top before baking.
- Store blondies in an airtight container at room temperature for up to 4 days.
- You can freeze blondies for up to 2 months; thaw before serving.
