Peanut Butter Blondies

Chewy and rich peanut butter blondies with a soft, fudgy center and a slightly crisp top, perfect for peanut butter lovers.

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) packed brown sugar
  • 1/2 cup (130g) creamy peanut butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (90g) chocolate chips or chunks (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth.
  3. Stir in peanut butter, eggs, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Stir in chocolate chips if using.
  7. Spread batter evenly into the prepared pan.
  8. Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely in the pan before slicing into squares.

Notes

  • For extra peanut flavor, swirl additional peanut butter on top before baking.
  • Store blondies in an airtight container at room temperature for up to 4 days.
  • You can freeze blondies for up to 2 months; thaw before serving.
