Pineapple Chicken Skewers

Juicy pineapple chicken skewers featuring marinated chicken chunks and sweet pineapple pieces grilled to perfection, ideal for summer barbecues.

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp black pepper
  • 1 red bell pepper, cut into chunks (optional)
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and black pepper to make the marinade.
  2. Add chicken pieces to the marinade, cover, and refrigerate for at least 1 hour (or overnight for best flavor).
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread marinated chicken, pineapple chunks, and bell pepper pieces (if using) alternately onto the skewers.
  5. Preheat grill to medium-high heat and lightly oil the grate.
  6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  7. Remove from grill and let rest for a couple of minutes before serving.

Notes

  • Use canned pineapple if fresh is not available, but drain well.
  • Can be served with rice or a fresh salad.
  • Marinate overnight for deeper flavor.
  • Can also be cooked in the oven at 400°F for 20 minutes, turning halfway.
