Pioneer Woman Vanilla Bean Ice Cream Recipe

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean (split and scraped)
  • 1 teaspoon vanilla extract
  • 5 large egg yolks

Instructions

  1. In a medium saucepan, combine the heavy cream, milk, sugar, and the scraped vanilla bean (along with the pod). Heat over medium heat until the mixture is warm but not boiling.
  2. In a separate bowl, whisk the egg yolks until smooth and pale. Slowly pour in a small amount of the warm milk mixture into the yolks while whisking constantly to temper them.
  3. Gradually pour the tempered yolks back into the saucepan with the remaining milk mixture, stirring constantly. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  4. Remove the pan from the heat and strain the mixture to remove the vanilla bean pod and any curdled bits.
  5. Stir in the vanilla extract. Let the custard cool to room temperature, then refrigerate it for several hours or overnight.
  6. Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer’s instructions.
  7. Transfer the churned ice cream to a container and freeze until firm, about 4 hours or overnight.

Notes

  • Ensure to scrape the vanilla bean pod thoroughly to get all the seeds for a rich flavor.
  • If you don’t have an ice cream maker, you can place the custard in a shallow container, freeze it, and stir every 30 minutes until it reaches the desired consistency.
