Popcorn with herbs

A quick, aromatic snack featuring freshly popped corn tossed with a vibrant blend of dried and fresh herbs, perfect for movie night or as a light party appetizer.

  • 3 Tbsp neutral oil (e.g., sunflower or canola)
  • 1/2 cup popcorn kernels
  • 2 Tbsp vegan butter, melted
  • 1 Tbsp extra-virgin olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp dried rosemary, crushed
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp fine sea salt, or to taste
  • 1/8 tsp freshly ground black pepper
  • 2 Tbsp finely chopped fresh parsley
  • 1 Tbsp finely chopped fresh chives
  • Optional: pinch of red-pepper flakes for heat

Instructions

  1. Heat the neutral oil in a large heavy-bottomed pot over medium-high heat. Add three popcorn kernels, cover, and wait until they pop.
  2. Remove the popped kernels, add the remaining popcorn, cover, and shake pot to coat kernels in oil. Cook, shaking occasionally, until popping slows to about 2 seconds between pops (3–4 minutes).
  3. Immediately transfer popcorn to a large bowl. Drizzle with melted vegan butter and olive oil; toss to coat evenly.
  4. In a small bowl, whisk together thyme, oregano, rosemary, garlic powder, onion powder, salt, pepper, and optional red-pepper flakes.
  5. Sprinkle herb mixture over popcorn while tossing. Add fresh parsley and chives, then toss again until herbs are well distributed.
  6. Taste and adjust seasoning. Serve warm.

Notes

  • For crisper popcorn, pop kernels in batches to avoid steam buildup.
  • Substitute ghee or regular butter if not vegan.
  • Use an air-popper and skip the neutral oil for an even lower-fat version.
  • Store leftovers in an airtight container for up to 2 days; refresh in a 150 °C (300 °F) oven for 5 minutes.
