Pumpkin Bars (The Best Pumpkin Bars)

Soft, moist, and perfectly spiced pumpkin bars topped with a luscious cream cheese frosting. These pumpkin bars are an easy fall dessert that’s always a crowd-pleaser.

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 4 large eggs
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 1 (15 oz) can pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 10×15-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  3. In a large mixing bowl, beat eggs, sugar, oil, pumpkin puree, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  7. To make the frosting, beat cream cheese and butter together until smooth. Add powdered sugar and vanilla, and mix until creamy.
  8. Spread frosting evenly over cooled pumpkin bars. Cut into squares or rectangles before serving.

Notes

  • Make sure the bars are fully cooled before frosting to prevent melting.
  • Store leftovers in the refrigerator for up to 5 days.
  • Can be made a day ahead for convenience.
