- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 4 large eggs
- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 1 (15 oz) can pumpkin puree
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- Preheat oven to 350°F (175°C). Grease and flour a 10×15-inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
- In a large mixing bowl, beat eggs, sugar, oil, pumpkin puree, and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- To make the frosting, beat cream cheese and butter together until smooth. Add powdered sugar and vanilla, and mix until creamy.
- Spread frosting evenly over cooled pumpkin bars. Cut into squares or rectangles before serving.
Notes
- Make sure the bars are fully cooled before frosting to prevent melting.
- Store leftovers in the refrigerator for up to 5 days.
- Can be made a day ahead for convenience.
