- 1 cup pumpkin puree
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/2 cup Greek yogurt
- 1 tsp vanilla extract
- 1 cup oat flour
- 1/2 cup vanilla protein powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/4 cup mini chocolate chips or chopped nuts (optional)
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together pumpkin puree, eggs, maple syrup, Greek yogurt, and vanilla until smooth.
- In another bowl, combine oat flour, protein powder, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Stir in chocolate chips or nuts if using.
- Divide batter evenly among muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes in the pan before transferring to a wire rack.
Notes
- Use unflavored or vanilla protein powder for best results.
- Store muffins in an airtight container for up to 4 days, or freeze for longer storage.
- Sweetness can be adjusted with more or less maple syrup.
