Pumpkin Spice Toffee or Pumpkin Spice Truffles

Rich and festive pumpkin spice candy that can be made two ways: as crunchy toffee or smooth creamy truffles, both perfect for fall gatherings and holiday treats.

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin spice mix
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (for coating)
  • 1/2 cup finely chopped pecans or walnuts (optional, for toffee)
  • 8 oz cream cheese, softened (for truffles)
  • 2 cups powdered sugar (for truffles)
  • 2 cups white or dark chocolate coating (for truffles)

Instructions

  1. For Toffee: In a heavy saucepan, melt butter with sugar, water, and salt over medium heat. Stir constantly until the mixture reaches 300°F on a candy thermometer.
  2. Remove from heat and stir in pumpkin spice and vanilla. Immediately pour onto a greased baking sheet and spread evenly.
  3. Sprinkle with chocolate chips while hot, let melt, then spread evenly. Top with nuts if desired. Cool completely and break into pieces.
  4. For Truffles: Beat softened cream cheese with pumpkin spice and vanilla until smooth. Gradually mix in powdered sugar until a dough forms.
  5. Shape into 1-inch balls and freeze for 30 minutes.
  6. Melt coating chocolate and dip each ball until fully covered. Place on parchment paper to set.
  7. Store both versions in an airtight container until ready to serve.

Notes

  • You can adjust pumpkin spice to taste for a stronger or milder flavor.
  • For extra crunch in truffles, roll coated truffles in crushed cookies or nuts.
  • Toffee can be stored at room temperature, while truffles should be kept refrigerated.
