Quick and Flavorful Bacon Fried Rice Recipe

A quick and flavorful bacon fried rice that comes together in just 20 minutes, combining crispy bacon, tender vegetables, and fragrant rice for an easy weeknight meal.

  • 4 slices bacon, chopped
  • 2 cups cooked day-old white rice
  • 2 eggs, lightly beaten
  • ½ cup diced onion
  • ½ cup frozen peas and carrots
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste

Instructions

  1. In a large skillet or wok over medium heat, cook the chopped bacon until crispy, about 5 minutes. Remove with a slotted spoon and set aside, leaving about 1 tbsp of bacon fat in the pan.
  2. If needed, add the vegetable oil to the pan. Add diced onion and sauté until translucent, about 2 minutes.
  3. Add minced garlic and frozen peas and carrots; cook until heated through, about 2 minutes more.
  4. Push the vegetables to one side of the pan. Pour the beaten eggs into the empty side and scramble until just set, then mix with the vegetables.
  5. Add the cold rice to the pan, breaking up any clumps. Drizzle with soy sauce and sesame oil, then stir-fry until the rice is evenly coated and heated through, about 3–4 minutes.
  6. Return the crispy bacon to the pan and toss to combine. Stir in sliced green onions.
  7. Season with salt and pepper to taste. Serve immediately.

Notes

  • For best texture, use day-old rice that’s been refrigerated overnight.
  • Swap soy sauce for tamari to make this gluten-free.
  • Add a pinch of red pepper flakes or a dash of Sriracha for heat.
  • Leftovers store well in an airtight container in the fridge for up to 3 days.
