Rainbow Cotton Candy Pancakes

Fluffy rainbow-colored pancakes layered with cotton candy for a fun and whimsical breakfast or dessert treat, perfect for parties or special occasions.

  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • Food coloring (red, blue, green, yellow, etc.)
  • 1 cup cotton candy (various colors)
  • Whipped cream (optional for garnish)
  • Sprinkles (optional for garnish)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk milk, eggs, melted butter, and vanilla until smooth.
  3. Pour wet ingredients into the dry mixture and stir until just combined (do not overmix).
  4. Divide the batter evenly into several small bowls and tint each with a different food coloring.
  5. Preheat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
  6. Pour small portions of colored batter onto the pan to make pancakes. Cook until bubbles form on the surface, then flip and cook the other side until golden.
  7. Stack pancakes in rainbow order, layering with cotton candy between pancakes if desired.
  8. Top with whipped cream, sprinkles, and extra cotton candy for garnish.

Notes

  • Do not place cotton candy directly on hot pancakes as it will melt instantly—use it just before serving.
  • Food coloring gels work best for vibrant rainbow shades.
  • You can prepare the batter ahead of time, but cook pancakes fresh for best texture.
