Rainbow Pastel Swirl Cake

A visually stunning and deliciously sweet Rainbow Pastel Swirl Cake with soft, fluffy layers in beautiful pastel colors, perfect for celebrations and parties.

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Food coloring (pastel pink, blue, yellow, green, purple, etc.)
  • Buttercream frosting (for layering and decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
  6. Divide the batter evenly into separate bowls and color each portion with a different pastel food coloring.
  7. Spoon dollops of each colored batter into the cake pans, layering and swirling gently with a knife for a marbled effect.
  8. Bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.
  9. Level the cake layers if needed. Stack and frost with buttercream frosting, decorating as desired.

Notes

  • Use gel food coloring for more vibrant pastel shades.
  • Make sure the cake layers are completely cooled before frosting.
  • Store leftovers in an airtight container for up to 3 days.
