Rainbow Sprinkle Ice Cream Cake

A fun and festive Rainbow Sprinkle Ice Cream Cake made with layers of ice cream, cake, whipped topping, and colorful sprinkles. Perfect for birthdays and celebrations.

  • 1 box funfetti or vanilla cake mix (plus ingredients listed on box)
  • 1.5 quarts vanilla ice cream, softened
  • 1.5 quarts chocolate ice cream, softened
  • 2 cups whipped topping (like Cool Whip)
  • 1 cup rainbow sprinkles (divided)
  • Optional: chocolate syrup or fudge sauce for drizzling

Instructions

  1. Preheat oven and prepare cake mix according to package instructions. Bake in a 9-inch springform pan and let it cool completely.
  2. Once cake has cooled, spread softened chocolate ice cream evenly over the cake. Freeze for 30 minutes or until firm.
  3. Add a layer of softened vanilla ice cream over the chocolate layer. Sprinkle 1/2 cup of rainbow sprinkles on top. Freeze again for at least 1 hour or until solid.
  4. Spread whipped topping over the top of the frozen cake and decorate with remaining sprinkles.
  5. Optional: drizzle with chocolate syrup or fudge sauce.
  6. Freeze the entire cake for at least 2 hours or overnight for best results.
  7. Remove from freezer about 10 minutes before serving for easier slicing.
