- 1 box funfetti or vanilla cake mix (plus ingredients listed on box)
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate ice cream, softened
- 2 cups whipped topping (like Cool Whip)
- 1 cup rainbow sprinkles (divided)
- Optional: chocolate syrup or fudge sauce for drizzling
- Preheat oven and prepare cake mix according to package instructions. Bake in a 9-inch springform pan and let it cool completely.
- Once cake has cooled, spread softened chocolate ice cream evenly over the cake. Freeze for 30 minutes or until firm.
- Add a layer of softened vanilla ice cream over the chocolate layer. Sprinkle 1/2 cup of rainbow sprinkles on top. Freeze again for at least 1 hour or until solid.
- Spread whipped topping over the top of the frozen cake and decorate with remaining sprinkles.
