- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup raspberry jam
- 1/2 cup shelled pistachios, chopped
- 1/4 cup brown sugar
- 1/4 cup rolled oats
- 2 tbsp all-purpose flour (for crumble)
- 2 tbsp unsalted butter, melted
- Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the vanilla extract.
- Add the flour and salt, mixing until a crumbly dough forms.
- Press 2/3 of the dough evenly into the bottom of the prepared baking dish to form the crust.
- Spread the raspberry jam evenly over the crust layer.
- In a separate bowl, combine the remaining dough, chopped pistachios, brown sugar, oats, additional flour, and melted butter. Mix until crumbly.
- Sprinkle the pistachio crumble evenly over the jam layer.
- Bake for 30–35 minutes or until the top is golden and set.
- Allow to cool completely before cutting into bars.
