These Raspberry Pistachio Crumble Bars are a delightful layered dessert featuring a buttery crust, tangy raspberry jam, and a crunchy pistachio crumble topping. Perfect for snacking or serving at gatherings.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup raspberry jam
  • 1/2 cup shelled pistachios, chopped
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 2 tbsp all-purpose flour (for crumble)
  • 2 tbsp unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the vanilla extract.
  3. Add the flour and salt, mixing until a crumbly dough forms.
  4. Press 2/3 of the dough evenly into the bottom of the prepared baking dish to form the crust.
  5. Spread the raspberry jam evenly over the crust layer.
  6. In a separate bowl, combine the remaining dough, chopped pistachios, brown sugar, oats, additional flour, and melted butter. Mix until crumbly.
  7. Sprinkle the pistachio crumble evenly over the jam layer.
  8. Bake for 30–35 minutes or until the top is golden and set.
  9. Allow to cool completely before cutting into bars.

Notes

  • Use seedless raspberry jam for a smoother texture.
  • Bars can be stored in an airtight container at room temperature for up to 4 days.
  • Try substituting pistachios with almonds or walnuts if preferred.
