  • 1 tablespoon balsamic vinegar (optional, for savory)
  • 1 tablespoon honey or maple syrup (optional, for sweet)
  • Pinch of salt (optional)
  • Fresh herbs like thyme or rosemary (optional, for savory)
  • 1 teaspoon vanilla extract (optional, for sweet)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cherries with olive oil (savory) or melted butter (sweet), and additional ingredients depending on your chosen variation (balsamic vinegar, honey/maple syrup, salt, herbs, vanilla extract).
  3. Spread cherries on a parchment-lined baking sheet in a single layer.
  4. Roast for 15-20 minutes, until cherries soften and juices caramelize slightly.
  5. Remove from oven, let cool slightly, and serve warm or at room temperature.
