Roasted Cherry Chocolate Chip Ice Cream

  • 2 cups fresh cherries, pitted and halved
  • 2 tablespoons granulated sugar (for roasting cherries)
  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • Pinch of salt
  • ¾ cup semi-sweet chocolate chips or chopped dark chocolate

Instructions

  1. Preheat oven to 400°F (200°C). Place cherries on a baking sheet, sprinkle with 2 tablespoons sugar, and roast for 15-20 minutes until softened and juices are bubbly. Let cool completely.
  2. In a large bowl, whisk together heavy cream, whole milk, remaining ¾ cup sugar, vanilla extract, and a pinch of salt until sugar is dissolved.
  3. Pour mixture into an ice cream maker and churn according to manufacturer’s instructions, typically 20-25 minutes.
  4. During the last few minutes of churning, fold in cooled roasted cherries and chocolate chips.
  5. Transfer the ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or overnight before serving.

Notes

  • For an even richer flavor, use dark chocolate chunks instead of semi-sweet chocolate chips.
  • You can substitute frozen cherries if fresh cherries are unavailable.
  • Allow the ice cream to soften for 5-10 minutes at room temperature before serving for easier scooping.
