- 2 cups fresh cherries, pitted and halved
- 2 tablespoons granulated sugar (for roasting cherries)
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 tablespoon pure vanilla extract
- Pinch of salt
- ¾ cup semi-sweet chocolate chips or chopped dark chocolate
- Preheat oven to 400°F (200°C). Place cherries on a baking sheet, sprinkle with 2 tablespoons sugar, and roast for 15-20 minutes until softened and juices are bubbly. Let cool completely.
- In a large bowl, whisk together heavy cream, whole milk, remaining ¾ cup sugar, vanilla extract, and a pinch of salt until sugar is dissolved.
- Pour mixture into an ice cream maker and churn according to manufacturer’s instructions, typically 20-25 minutes.
- During the last few minutes of churning, fold in cooled roasted cherries and chocolate chips.
- Transfer the ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or overnight before serving.
