Savory Spinach Feta Croissants

These savory spinach feta croissants are flaky, buttery pastries filled with a delicious mixture of spinach, feta cheese, and herbs. Perfect for breakfast, brunch, or a light snack.

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 egg, beaten (for egg wash)
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon dried oregano (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and oregano. Remove from heat and let cool.
  4. In a bowl, combine the cooked spinach mixture with crumbled feta cheese.
  5. Roll out the puff pastry sheet and cut into triangles.
  6. Place a spoonful of the spinach-feta mixture on the wider end of each triangle.
  7. Roll the pastry from the wide end toward the point to form a croissant shape.
  8. Place croissants on the prepared baking sheet. Brush with beaten egg.
  9. Bake for 20-25 minutes, or until golden brown and puffed.
  10. Remove from oven and let cool slightly before serving.

Notes

  • You can substitute frozen spinach (thawed and drained) for fresh spinach.
  • Try adding sun-dried tomatoes or herbs for extra flavor.
  • Serve warm or at room temperature.
