Instructions

  1. Crack the eggs into a bowl and whisk until smooth.
  2. Stir in the cottage cheese and season with salt and pepper.
  3. Heat butter or olive oil in a nonstick skillet over medium-low heat.
  4. Pour in the egg mixture and cook slowly, stirring gently with a spatula until soft curds form.
  5. Remove from heat while the eggs are still slightly creamy to avoid overcooking.
  6. Garnish with fresh herbs if desired and serve warm.
