Sheet Pan Mediterranean Shrimp and Vegetables

A quick and healthy one-pan dish featuring shrimp and Mediterranean vegetables, perfect for a busy weeknight dinner.

  • 1 lb shrimp, peeled and deveined
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, sliced
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a sheet pan, toss the shrimp and vegetables with olive oil, oregano, garlic powder, salt, and black pepper until evenly coated.
  3. Spread everything in a single layer on the sheet pan and arrange lemon slices over the top.
  4. Bake for 15-20 minutes, or until the shrimp are cooked through and the vegetables are tender.
  5. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • Feel free to swap out the vegetables with others like eggplant or asparagus based on your preference.
  • For extra flavor, you can add a drizzle of balsamic vinegar before serving.
