Shrimp and Watermelon Skewers

A refreshing and light summer appetizer featuring grilled shrimp and juicy watermelon chunks on skewers, perfect for BBQs or outdoor gatherings.

  • 1 pound large shrimp, peeled and deveined
  • 2 cups watermelon, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili flakes (optional)
  • Fresh mint or basil leaves for garnish (optional)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, honey, salt, pepper, and chili flakes.
  2. Add shrimp to the marinade and let sit for 15-20 minutes.
  3. Preheat grill or grill pan over medium-high heat.
  4. Thread shrimp and watermelon alternately onto skewers.
  5. Grill skewers for 2-3 minutes per side, until shrimp are opaque and cooked through.
  6. Remove from grill and garnish with fresh mint or basil if desired. Serve immediately.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Can be served with a yogurt or lime dipping sauce for added flavor.
  • Use seedless watermelon for easier preparation.
