Slow Cooker Chili

A hearty and flavorful slow cooker chili made with ground beef, beans, tomatoes, and warm spices, perfect for a comforting meal with minimal effort.

  • 1 lb (450 g) ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Add diced onion and garlic to the skillet, cooking until softened, about 3-4 minutes.
  3. Transfer the beef mixture to the slow cooker.
  4. Add diced tomatoes, kidney beans, black beans, tomato paste, beef broth, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper to the slow cooker.
  5. Stir to combine all ingredients thoroughly.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Taste and adjust seasoning before serving.

Notes

  • For a spicier chili, increase the cayenne pepper or add fresh chopped jalapeños.
  • Leftovers store well in the refrigerator for up to 4 days or can be frozen for up to 3 months.
  • You can substitute ground turkey or chicken for a lighter version.
