Strawberry Crinkle Cookies

Soft and chewy strawberry crinkle cookies with a beautiful crackled appearance and sweet berry flavor. Perfect for spring and summer treats.

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the cake mix, eggs, vegetable oil, and vanilla extract until a thick dough forms.
  3. Scoop tablespoon-sized amounts of dough and roll into balls.
  4. Roll each ball in powdered sugar until fully coated.
  5. Place the dough balls on the prepared baking sheet about 2 inches apart.
  6. Bake for 10-12 minutes or until cookies are set and crinkled.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use a cookie scoop for even-sized cookies.
  • Do not overbake; cookies will continue to set as they cool.
  • For extra strawberry flavor, add 1/2 tsp of strawberry extract to the dough.
