Stuffed Mushrooms

Savory and flavorful stuffed mushrooms filled with a creamy cheese mixture, perfect as an appetizer or party snack.

  • 20 large white mushrooms
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Cooking spray or extra olive oil for baking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushrooms and carefully remove the stems. Finely chop the stems and set aside.
  3. Heat olive oil in a skillet over medium heat. Sauté the chopped mushroom stems, onion, and garlic until softened, about 5 minutes.
  4. Remove from heat and stir in breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper until well combined.
  5. Spoon the filling into each mushroom cap and place them on a greased or lined baking sheet.
  6. Lightly spray the tops with cooking spray or drizzle with a little olive oil.
  7. Bake for 20 minutes or until the mushrooms are tender and the tops are golden brown.
  8. Let cool slightly before serving.

Notes

  • You can substitute cream cheese with goat cheese or ricotta for variation.
  • Add cooked sausage or bacon bits for a non-vegetarian option.
  • Stuffed mushrooms are best served warm.
