Stuffed Zucchini Boats

Stuffed Zucchini Boats are a healthy and delicious dish made by hollowing out zucchinis and filling them with a savory mixture of vegetables, protein, and cheese, then baked to perfection.

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 pound ground turkey or beef
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the centers using a spoon to create boats. Set aside the scooped flesh.
  3. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant and softened.
  4. Add ground turkey or beef to the skillet and cook until browned.
  5. Chop the scooped zucchini flesh and add it to the skillet along with diced tomatoes, oregano, basil, salt, and pepper. Cook for 5-7 minutes until the mixture is well combined and slightly thickened.
  6. Spoon the filling into the zucchini boats and place them in a baking dish.
  7. Sprinkle mozzarella and Parmesan cheese on top of each stuffed zucchini.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is golden and bubbly.
  9. Garnish with fresh parsley and serve hot.

Notes

  • You can substitute ground turkey with plant-based meat for a vegetarian version.
  • Add cooked rice or quinoa to the filling for extra bulk.
  • Use marinara sauce instead of diced tomatoes for a richer flavor.
