Light and refreshing Summer Pesto Chicken Wraps made with grilled chicken, vibrant vegetables, and flavorful pesto sauce, wrapped in a soft tortilla – perfect for a quick and healthy meal.

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/4 cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded lettuce or spinach
  • 1/4 cup crumbled feta cheese (optional)
  • 4 large flour tortillas or wraps
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken and basil pesto until evenly coated.
  2. Add cherry tomatoes, cucumber, red onion, and lettuce to the chicken mixture. Stir gently to mix.
  3. Warm the tortillas slightly to make them pliable.
  4. Divide the chicken mixture evenly among the tortillas.
  5. Top with crumbled feta cheese if using, and season with salt and pepper.
  6. Roll each tortilla tightly into a wrap.
  7. Slice in half and serve immediately or refrigerate until ready to eat.

Notes

  • For extra crunch, add sliced bell peppers or shredded carrots.
  • Use whole wheat or spinach tortillas for a healthier option.
