Ingredients

Scale
  • 14 oz (400g) firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/3 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 green onions, chopped
  • Sesame seeds, for garnish
  • Cooked rice, for serving

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Toss the tofu cubes in cornstarch to coat evenly.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden and crispy on all sides. Remove and set aside.
  4. In the same pan, add garlic and ginger and sauté for 1 minute until fragrant.
  5. Add bell peppers, broccoli, and snap peas. Stir-fry for 4–5 minutes until vegetables are tender-crisp.
  6. Return the tofu to the pan. Add sweet chili sauce, soy sauce, and rice vinegar. Stir to combine and heat through.
  7. Garnish with chopped green onions and sesame seeds.
  8. Serve hot over cooked rice.

Notes

  • Adjust the sweetness or spiciness of the sauce by adding more or less sweet chili sauce.
  • Use tamari or gluten-free soy sauce for a gluten-free version.
