- 14 oz (400g) firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/3 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 2 green onions, chopped
- Sesame seeds, for garnish
- Cooked rice, for serving
- Press the tofu to remove excess moisture, then cut it into cubes.
- Toss the tofu cubes in cornstarch to coat evenly.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden and crispy on all sides. Remove and set aside.
- In the same pan, add garlic and ginger and sauté for 1 minute until fragrant.
- Add bell peppers, broccoli, and snap peas. Stir-fry for 4–5 minutes until vegetables are tender-crisp.
- Return the tofu to the pan. Add sweet chili sauce, soy sauce, and rice vinegar. Stir to combine and heat through.
- Garnish with chopped green onions and sesame seeds.
- Serve hot over cooked rice.
Notes
- Adjust the sweetness or spiciness of the sauce by adding more or less sweet chili sauce.
- Use tamari or gluten-free soy sauce for a gluten-free version.
- Optional: Add mushrooms, carrots, or baby corn for extra veggies.
