  • 1 tablespoon olive oil
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/4 cup plain Greek yogurt (or plant-based alternative)
  • 1 tablespoon almond butter (or any nut/seed butter)
  • 1 tablespoon chia seeds
  • 1/4 cup fresh berries (e.g., blueberries, strawberries)
  • 1 tablespoon chopped nuts (e.g., walnuts, almonds)
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, cinnamon, and salt. Spread on a baking sheet.
  3. Roast for 20–25 minutes, or until tender and slightly caramelized.
  4. Remove sweet potatoes from the oven and let cool slightly.
  5. In a bowl, add roasted sweet potatoes as the base.
  6. Top with Greek yogurt, almond butter, chia seeds, berries, and chopped nuts.
  7. Drizzle with honey or maple syrup if desired.
  8. Serve immediately and enjoy!
