Tofu Pasta in Sun-dried Tomato “Marry Me” Sauce

A creamy, flavorful pasta dish made with tofu and a rich sun-dried tomato sauce, perfect for a comforting meal.

  • 200g pasta of choice
  • 200g firm tofu, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup coconut milk
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast (optional)
  • Salt and pepper, to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  3. Add crumbled tofu to the pan and cook for 5-7 minutes until golden brown.
  4. Add sun-dried tomatoes and vegetable broth to the pan, stirring to combine.
  5. Pour in coconut milk and stir well. Let it simmer for 5 minutes, allowing the sauce to thicken slightly.
  6. Season the sauce with lemon juice, nutritional yeast, salt, and pepper. Stir to combine.
  7. Mix the cooked pasta into the sauce, tossing to coat the pasta evenly.
  8. Garnish with fresh basil and serve warm.

Notes

  • For a richer flavor, you can use cashew cream instead of coconut milk.
  • If you prefer a spicy kick, add red pepper flakes to the sauce.
  • Ensure the tofu is well-drained before crumbling to avoid excess moisture in the dish.
