Tomato Basil Zoodle Salad

A light, refreshing, and healthy salad featuring spiralized zucchini noodles (zoodles), juicy tomatoes, and fresh basil, perfect for summer meals or a low-carb side dish.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis into zoodles and place them in a large mixing bowl.
  2. Add halved cherry tomatoes and torn basil leaves to the bowl.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  4. Pour the dressing over the zoodle mixture and toss gently to combine.
  5. Serve immediately or chill for 10–15 minutes before serving for enhanced flavor.

Notes

  • Use a spiralizer for best results with zucchini noodles.
  • Pat zoodles dry with a paper towel to avoid excess moisture.
  • Add mozzarella balls or avocado for extra richness if desired.
