Tuna Melt Sandwiches

- 2 cans (5 oz each) tuna, drained
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon finely chopped red onion
- 1 tablespoon chopped celery
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 4 slices cheddar or Swiss cheese
- 8 slices bread (white, wheat, or sourdough)
- 2 tablespoons butter, softened
- In a medium bowl, combine tuna, mayonnaise, Dijon mustard, onion, celery, lemon juice, salt, and pepper. Mix until well blended.
- Butter one side of each bread slice.
- Place 4 slices of bread, buttered side down, on a skillet or griddle over medium heat.
- Top each with tuna mixture and a slice of cheese.
- Cover with the remaining bread slices, buttered side up.
- Cook until the bottom is golden brown, about 3–4 minutes. Flip and cook until the other side is golden brown and cheese is melted, another 3–4 minutes.
- Serve warm.
Notes
- For extra flavor, add a slice of tomato before adding the top bread slice.
- Use your favorite cheese—cheddar, Swiss, or provolone work well.
- You can toast the sandwiches in an oven if making multiple servings at once.
