Turkey Taco Bowls

These turkey taco bowls are a healthy, flavorful, and customizable meal made with seasoned ground turkey, fresh vegetables, and your choice of toppings, all served over rice or lettuce.

  • 1 lb (450 g) ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/4 cup water
  • 2 cups cooked rice or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup salsa
  • 1/4 cup sour cream or Greek yogurt (optional)
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 5–6 minutes.
  4. Stir in taco seasoning and water. Simmer for 2–3 minutes until the mixture is well-coated and slightly thickened.
  5. Prepare your bowls by adding a base of rice or lettuce.
  6. Top with seasoned turkey, cherry tomatoes, corn, black beans, shredded lettuce, and cheese if using.
  7. Add salsa, sour cream or Greek yogurt, and fresh cilantro.
  8. Serve with lime wedges and enjoy immediately.

Notes

  • You can substitute ground chicken or beef for the turkey.
  • For a low-carb option, use cauliflower rice instead of regular rice.
  • Make it dairy-free by omitting cheese and sour cream or using plant-based alternatives.
