Turkey Taco Salad Jars are a convenient and healthy make-ahead meal option layered with seasoned ground turkey, fresh vegetables, and taco toppings, perfect for lunches or on-the-go meals.

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/4 cup water
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or frozen and thawed)
  • 1 red bell pepper, chopped
  • 1/2 cup red onion, diced
  • 2 cups shredded romaine lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream or Greek yogurt (optional)
  • 1/4 cup chopped cilantro (optional)
  • Juice of 1 lime (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned.
  2. Stir in taco seasoning and water. Simmer for 5 minutes until thickened. Let cool.
  3. Layer the jars starting with salsa and sour cream (if using) at the bottom to prevent sogginess.
  4. Add turkey taco meat, followed by black beans, corn, cherry tomatoes, red bell pepper, and red onion.
  5. Top with shredded cheese and romaine lettuce.
  6. Seal jars with lids and refrigerate until ready to eat.
  7. Shake or pour into a bowl before eating. Optionally garnish with lime juice and cilantro.

Notes

  • Use wide-mouth mason jars for easier layering and serving.
  • Keep dressing ingredients at the bottom to prevent soggy lettuce.
  • Customize toppings based on preference – avocado, jalapeños, or tortilla strips are great additions.
