- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/4 cup water
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or frozen and thawed)
- 1 red bell pepper, chopped
- 1/2 cup red onion, diced
- 2 cups shredded romaine lettuce
- 1/2 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/2 cup sour cream or Greek yogurt (optional)
- 1/4 cup chopped cilantro (optional)
- Juice of 1 lime (optional)
- Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned.
- Stir in taco seasoning and water. Simmer for 5 minutes until thickened. Let cool.
- Layer the jars starting with salsa and sour cream (if using) at the bottom to prevent sogginess.
- Add turkey taco meat, followed by black beans, corn, cherry tomatoes, red bell pepper, and red onion.
- Top with shredded cheese and romaine lettuce.
- Seal jars with lids and refrigerate until ready to eat.
- Shake or pour into a bowl before eating. Optionally garnish with lime juice and cilantro.

- Keep dressing ingredients at the bottom to prevent soggy lettuce.
