Turkish Delight

- 4 cups granulated sugar
- 1 1/4 cups cornstarch
- 1 tsp cream of tartar
- 4 1/4 cups water
- 1 tbsp lemon juice
- 1 tbsp rosewater (or orange blossom water)
- Food coloring (optional, typically pink or yellow)
- 1 cup powdered sugar (for dusting)
- In a saucepan, combine 4 cups of sugar, 1 1/2 cups of water, and lemon juice. Bring to a boil and simmer until it reaches 240°F (115°C), then remove from heat.
- In a separate large saucepan, mix cornstarch, cream of tartar, and the remaining water. Cook over medium heat until thick and paste-like.
- Slowly pour the hot sugar syrup into the cornstarch mixture, stirring constantly.
- Cook the mixture on low heat, stirring frequently, for about 1 hour until golden and very thick.
- Stir in rosewater and food coloring if using.
- Pour into a greased or parchment-lined square baking dish and let cool overnight at room temperature.
- Cut into cubes and dust with powdered sugar to prevent sticking.
Notes
- Rosewater gives the traditional flavor, but you can substitute with lemon or orange extract.
- Store Turkish Delight in an airtight container to keep it from drying out.
- Use a sharp knife dusted with powdered sugar to cut clean cubes.
