- 1 cup bell peppers, sliced
- 1 cup zucchini, diced
- 1 cup mushrooms, sliced
- 1/2 cup red onion, sliced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup crumbled feta or cotija cheese (optional)
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Heat olive oil in a large skillet over medium heat.
- Add bell peppers, zucchini, mushrooms, and red onion. Sauté for 5–7 minutes until vegetables are tender.
- Stir in chili powder, cumin, salt, and pepper. Cook for an additional 1–2 minutes.
- Warm tortillas in a dry skillet or microwave until soft.
- Fill each tortilla with sautéed vegetables.
- Top with shredded lettuce, diced tomatoes, cheese (if using), and fresh cilantro.
- Serve with lime wedges for squeezing over the tacos.
