Ingredients

  • 4 cups arugula, washed and dried
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil

  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, add arugula, cubed watermelon, red onion, and crumbled feta.
  2. Drizzle with olive oil and balsamic glaze or vinegar.
