Whipped Ricotta

A light, creamy, and versatile spread made from ricotta cheese, perfect as an appetizer or snack with bread, crackers, or vegetables.

  • 1 cup whole milk ricotta cheese
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional toppings: honey, fresh herbs, chili flakes, toasted nuts

Instructions

  1. Place the ricotta, olive oil, lemon zest, and lemon juice in a food processor or mixing bowl.
  2. Whip for 2-3 minutes until smooth, creamy, and fluffy. If using a bowl, beat with a hand mixer or whisk vigorously.
  3. Season with salt and black pepper to taste.
  4. Transfer to a serving bowl and drizzle with olive oil.
  5. Top with optional ingredients such as honey, herbs, chili flakes, or nuts as desired.
  6. Serve with toasted bread, crackers, or raw vegetables.

Notes

  • Use high-quality ricotta for the best texture and flavor.
  • For a sweeter version, add honey or maple syrup.
  • Can be made ahead and stored in the refrigerator for up to 2 days.
