- 2 tbsp extra virgin olive oil (plus more for drizzling)
- 1 tsp lemon zest
- 1 tbsp lemon juice
- Salt, to taste

- Place the ricotta, olive oil, lemon zest, and lemon juice in a food processor or mixing bowl.
