White Chocolate Strawberry Mousse

A light and creamy white chocolate strawberry mousse, blending the sweetness of white chocolate with the freshness of ripe strawberries for a delightful dessert.

  • 200g white chocolate, chopped
  • 300ml heavy cream, divided
  • 250g fresh strawberries, hulled and pureed
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 2 egg whites
  • Pinch of salt
  • Fresh strawberries and white chocolate shavings, for garnish

Instructions

  1. Melt the white chocolate with 100ml of cream over a double boiler until smooth. Let it cool slightly.
  2. In a separate bowl, whip the remaining 200ml of cream to soft peaks.
  3. Puree the strawberries with the sugar and vanilla until smooth.
  4. In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold the melted white chocolate into the strawberry puree until combined.
  6. Fold in the whipped cream, followed by the beaten egg whites, being careful not to deflate the mixture.
  7. Spoon the mousse into serving glasses and refrigerate for at least 2 hours to set.
  8. Garnish with fresh strawberries and white chocolate shavings before serving.

Notes

  • Ensure all mixing bowls are clean and dry when whipping egg whites.
  • You can replace fresh strawberries with frozen ones, thawed and drained.
  • For a firmer texture, add 1 tsp gelatin dissolved in warm water to the strawberry puree before folding.
