- 2 cups plain Greek yogurt (full-fat or 2%)
- 2 tablespoons honey (or maple syrup)
- 1 teaspoon pure vanilla extract
- 1 cup mixed berries (strawberries diced, blueberries, raspberries)
- 2 tablespoons sliced almonds (optional for crunch)
- Line a rimmed baking sheet (about 9×13 in / 23×33 cm) with parchment paper.
- In a medium bowl, whisk together the yogurt, honey, and vanilla until smooth.
- Spread the yogurt mixture evenly over the prepared baking sheet, about ¼ inch (6 mm) thick.
- Scatter the mixed berries evenly over the yogurt and gently press them in. Sprinkle sliced almonds on top if using.
- Freeze uncovered until solid, at least 2 hours.
- Once frozen, lift the parchment out of the pan and break the yogurt slab into bark-like pieces.
- Serve immediately or store the pieces in an airtight container in the freezer for up to 2 months.
